Steak and Egg Sandwich

I had a recipe blog which has started to get a little stale. I hope to continue my original vision for that blog here and continue to share great, easy-to-make recipes using ingredients from our farm. Let’s get started.
What do you do when your wife decides to go out for brunch without you? You make your own brunch! Last night we had a delicious t-bone steak dinner with some friends using our own pasture-raised beef. The steaks were so huge that we couldn’t eat all of it and had leftovers. I knew exactly what I wanted when I woke up this morning: steak and eggs!
We also had some delicious Big River sourdough bread left over so I set my creative juices into action. Here’s what I did:
Steak and Egg Sandwich – Serves 1
Ingredients:
- 1/4 lb leftover pasture-raised steak
- 1 egg from pasture-raised hen
- Two slices rustic bread
- 1 slice lettuce or other green
- pinch of kosher salt
- lemon pepper (I LOVE Larripen Lemon Pepper from Oregon Flavor Rack)
- 2 tablespoons of canola oil (or butter)
- Butter for the toast
Method:
- Slice the steak into small 1/4 inch thick strips
- Heat a cast-iron skillet on medium heat
- Add oil to skillet
- Toast the bread
- Add the steak around the edges of the pan and heat on one side
- Flip the steak
- Add the egg to the middle and cook for about a minute
- Add pinch of salt and lemon pepper to the egg
- Flip the egg and let it cook until your desired done-ness. I like over-easy so I just do it for about 30 seconds.
- I always add more lemon pepper at this stage of cooking the egg
- Butter the toast
- Layer the lettuce, egg, steak, on the toast and top it off!
- Serve and enjoy with a piping hot cup of coffee!
